Chef Black Hatena is one of the strong actors on the sustainable food scenario in Thailand. Based in Chiang Mai, north of the country, he Runs the exclusive restaurant Blackitch Artisan Kitchen, with his wife Chef Anothai Pichaiyut. His work philosophy is based in 6 pillars: Artisan, Creativity, Umami, Balance, Fermentation and Localized. But one of the points where Black stands out, is Fermentation. Having a history of it in the family, with self made Fish Sauce and other fermented products crucial fo Thai cuisine, Black found on fermentation a strong point of his cooking identity. Now he is using this knowledge to develop a new line in his work, diving into experiments with Cacao. Better saying, Thai Cacao.
