CAN CHEFS SAVE THE WORLD? | Chef Massimo Bottura

Massimo Bottura is one of the most celebrated chefs in the world. His 3 Michelin Star restaurant Osteria Francescana in Modena Italy has also taken the number one spot on the “Worlds 50 Best Restaurants” list in 2016 and again in 2018. But his achievements don’t stop in his kitchen. Massimo is also founder of Food For Soul, a global movement in collaboration with several organizations, raising global awareness against food waste. 

Massimo’s energy, charisma and passion for food and culture landed him on Time Magazine’s “Time 100: The 100 Most Influential People of 2019”. 

Massimo speaks about his trajectory and its relation to arts, as well as the role of chefs fighting for social changes in the world.

Chef Ana Roš, from the restaurant Hiša Franko in Kobarid Slovenia, is one of the world’s main players when it comes to the “locavore” concept. Chef Ana has stood by her region and the people who live from the land through her food. Surrounded by nature, at Hiša Franko she bring the values of sustainable local sourced products to the table. 

Her name became a global reference and a model for all things locally sourced, especially following her appearance on the popular Netflix Series, “Chefs Table”.

Ana Roš was crowed The World’s Best Female Chef 2017.

Egyptian-Chinese, Bobby Chinn is a true global citizen. Born in New Zealand and educated in the UK, Bobby began his career in San Francisco, but was in Vietnam where he opened his first restaurant and carved out his name. His global personality became especially relevant after the show “World Café”, on which he explored the globe visiting food markets, cooking and discovering the culinary cultures around the globe. 

Currently Bobby is a judge on “Top Chef Middle East”, while maintaining his position as Tourism Ambassador for Vietnam in Europe, as well as WWF’s Sustainable Seafood Ambassador for the Coral Triangle.

Chef LG Han has being attracting global attention for bringing to the table something decidedly unexpected: a fine-dining menu based on all local sourced products from Singapore.

Singapore has a reputation for its modern architecture, but not for its farming. Chef Han is changing the perception through his deep research of small producers in his ongoing quest to preserve Singaporean flavours and food culture. Through this challenging project that earned him one star in the Michelin Guide, Chef Han raises curiosity and questions about Singaporean farming systems, and ignites a discussion around Singapore’s entire food supply system.

The spaces she creates to present her food and her thoughts are vibrant and provocative. From questioning the value of food in relation to its cultural background, to gender perceptions in society. In this interview Che May Chow makes an analysis of the potential of food nowadays, looking back to the culinary scene in Hong Kong 15 years ago.

Chef MITSUHARU TSUMURA, also know as “Micha”, has called the worlds attention to the Nikkei Cuisine in Peru, through his restaurant Maido, voted “The Best Restaurant in Latin America” for 3 years in a roll. Of course as one of the most stablished fusion cuisines in the world, it has strong values behind every dish, mixing Japanese and Peruvian cultures. The attention to the ingredients creates a strong effect in how chef Micha, explored, studied and understood Peru in its diversity of land and people. Beyond that, Peru is one of the pioneer countries when it come to Chefs having such strong influence in society. Leaded by the icon chef Gastón Acurio, Peru experienced a popularisation of the professional cooking in the paste decade. Collaborations between chefs, universities, media, society and government, elevated the relevance of the profession and for that, its direct impact in society, from daily habits to creation and maintenance of laws, to protect the environment and it’s traditional communities.
