Odette, 3 Michelin star restaurant by Chef JULIEN ROYER in Singapore, was voted in 2019 and 2020, as best restaurant in Asia. Coming from the region of Cantal, France, surrounded by farms and artisanal producers, Julien talked to us about the challenges of working in Singapore, with reduced space for farming activities. From childhood memories to global experiences, Chef Julien presents us his thoughts on how society see chefs as artists, or artisans.
